Healing the Ecosystem through Regenerative Farming Dinner Menu

We look forward to serving you a dinner of  Northern California’s bounty at the height of summer. Join us at Soul Food Farm in Vacaville, California, June 24, for an evening of dining and discussion around regenerative agriculture.


All the vegetables, eggs, olive oil and strawberries will come from Soul Food Farm or neighboring farms. The meal also features Llano Seco heirloom beans, grown near Chico, California, chicken from Big Bluff Ranch near Red Bluff, California,  and LeftCoast Grassfed beef from Pescadero, California. The menu is created by Alexis Koefoed at Soul Food Farm and the dinner chef, Anne Goffin.

Pasture raised Big Bluff Ranch chicken liver pate
Radishes with butter and sea salt

Grilled romaine lettuce with Llano Seco canario beans, lardons and warm tarragon vinaigrette
Red wine LeftCoast Grassfed Osso Buco with mire poix and roasted potatoes
 Roasted strawberries with scented whipped cream and Scottish shortbread

The program

Enjoy a farm-fresh dinner at Soul Food Farm, a Solano County small farm, growing nutrient-dense food in healthy soil using regenerative practices. Learn about regenerative farming during a thoughtful dinner discussion led by Holistic Management Field Professional Spencer Smith. Reflect on the power of the consumer to heal land by supporting regenerative farmers. Ideate about how to increase demand for food and fiber grown in a way that creates vibrant landscapes instead of barren land. Enjoy a field walk to explore the impact of Holistic Management and regenerative agriculture.
